    These yummy Low FODMAP Scallops with Lemon are melt-in-your-mouth-good and perfect for a special supper whether you’re on the low FODMAP diet or not!

    If I had to pick a favorite source of protein, it would be perfectly-cooked, melt-in-your-mouth scallops. Yum!

    These Low FODMAP Scallops with Lemon are definitely a treat for us because scallops are pretty dang expensive here in Minnesota. However, when I do make them I’ve learned a couple of tricks and tips to perfectly cooked scallops.

    The first tip is to make sure your scallops are super dry. For us, they usually come frozen, so I will thaw them out in a bowl in our refrigerator. Then, I will drain them and lay them out on paper towels. Right before cooking, I will give them one final pat down with a paper towel to help make sure they are super dry.

    Secondly, make sure your pan is hot before adding your scallops. This helps to get a nice crusty sear on the outside while not overcooking the inside.

    Finally, try not to overcook your scallops. I am notorious for leaving things to cook on the stove while I multi-task on something else. This is not a recipe to do that! 🙂

    Description

    These yummy Low FODMAP Scallops with Lemon are melt-in-your-mouth-good and perfect for a special supper whether you’re on the low FODMAP diet or not!


    Ingredients

    Scale
    • 8 sea scallops
    • 2 Tbsp. butter (or ghee)
    • Salt, to taste
    • Lemon wedges, for serving

    Instructions

    1. Pat scallops dry with paper towels. Heat butter in a skillet over high heat. Once hot, add scallops and sear until golden brown on both sides, about 2 minutes per side.
    2. Season with salt and serve warm with lemon.

        Hi Pam, these scallops are cooked on the stove-top over high (or medium-high) heat, depending on your stove. The oven isn’t used for this recipe. 🙂 Thanks!
