Dusted with cinnamon sugar, this Low FODMAP Cinnamon French Toast is a delicious morning treat.
- 2 eggs
- ⅔ cup low FODMAP milk
- 1 tsp. vanilla extract
- 1 tsp. cinnamon, divided
- 2 tsp. butter
- 8 slices low FODMAP bread
- ¼ cup sugar
- Maple syrup, to taste
- In a large bowl, whisk together eggs, milk, vanilla, and ½ tsp. cinnamon.
- Heat butter in a large skillet over medium heat. Once hot, dip bread slices in egg mixture and place in skillet. Cook for 2 minutes per side or until golden brown.
- In a small bowl, whisk together remaining ½ tsp. cinnamon with sugar. Place cinnamon sugar mixture on a plate and gently press cooked French toast slices into the mixture to lightly coat. Serve with maple syrup.
Low FODMAP milk: I use Milkadamia macadamia milk
Low FODMAP bread: I use Udi’s Gluten-Free White Sandwich Bread.
