Description

Loaded with veggies, bacon, and eggs, this Low FODMAP Breakfast Pizza is a delicious way to start your day or enjoy it as a quick, 20-minute weeknight meal! It’s also gluten-free.


Ingredients

Scale
  • 1 Schär Gluten-Free Pizza Crust (or other low FODMAP pizza crust)
  • 1 cup shredded mozzarella
  • ¼ cup diced red pepper (about ¼ medium)
  • ¼ cup diced green pepper (about ¼ medium)
  • ¼ cup diced Roma tomato (about 1 small to medium tomato)
  • ¼ cup crumbled cooked bacon (about 23 slices)
  • 4 large eggs
  • Chopped parsley or chives, optional

Instructions

  1. Follow the baking directions listed on the pizza crust package. The crust may need to par-bake before adding toppings.
  2. When the crust is ready for toppings, top with mozzarella, red pepper, green pepper, tomato, and bacon, distributing evenly.
  3. Create four wells in toppings and crack an egg into each.
  4. Bake for 10-15 minutes or until cheese is melted and eggs are cooked. 
  5. Slice and serve warm, garnished with optional chives or parsley.
