Have you tried dragon fruit before? Only recently has this colorful fruit become more readily available in our midwestern grocery stores. So, it’s still pretty new to me. 🙂 From what I’ve learned, dragon fruit is often eaten fresh on its own or pureed into smoothies. And if you haven’t had it before, I think it tastes like a kiwi, but less tart.

Although I do enjoy eating it plain, I wanted to create a recipe using dragon fruit in a different form. Enter Dragon Fruit Granita. Granita is a frozen treat similar to shaved ice. It’s really easy to make and delicious way to cool off on a hot day.

Description

Low FODMAP Dragon Fruit Granita is a refreshing sweet treat – perfect on a hot day! 


Ingredients

  • 2 dragon fruit, cut in half and flesh scooped out
  • 2 limes, juice of

Instructions

  1. Puree dragon fruit flesh and lime juice. Pour into a rimmed baking sheet and freeze.
  2. To serve, scrape with a fork and place shaving into dishes.
